Literature References: A group of simple proteins. Yield only amino acids upon cleavage by enzymes or acids. Examples: gliadin, hordein, zein from grains.
Properties: Insoluble in water or neutral salt solvents. Sol in dil acids and alkalies and in 70-90% alcohol.
